Walnut Patties
Hearty baked patties made from potatoes, walnuts, carrots, and onions — perfect as a main dish, sandwich filling, or protein-rich side.

Ingredients
- 575 g (20.3 oz) potatoes
- 375 g (13.2 oz) walnuts
- 75 g (2.6 oz) carrots
- 150 g (5.3 oz) onion
- 2 garlic cloves
- 2 tsp salt
- 2 tsp dried parsley
- ½ tsp onion powder
- ½ tsp garlic powder
Instructions
- Finely grate the potatoes by hand or in a food processor and transfer them to a bowl. If they release excess liquid, drain most of it — especially with new potatoes. Otherwise, keeping some liquid helps prevent dryness.
- Finely grate the carrots and transfer them to a separate bowl.
- Finely chop the onion by hand or in a food processor and transfer it to a bowl.
- Grind the walnuts in a blender or food processor until finely ground and place them in a bowl.
- Press or finely mince the garlic.
- In a large bowl, combine all the prepared ingredients.
- Preheat the oven to 150°C (300°F) using the convection/hot-air setting. Allow the oven to fully heat before baking.
- Line a baking sheet with parchment paper.
- Form the patties by hand or with your preferred shaping tool.
- Bake for 30 minutes.
- Allow the patties to cool slightly before serving.

- Wonderful in wraps, on bread, or served with steamed cabbage, homemade ketchup, and polenta.
