Sesame Cashew Cookies
These lightly sweet, nutty cookies are made with sesame seeds, cashews, oatmeal, and honey for a wholesome, crunchy treat.

Ingredients
- 1.5 dl (⅔ cup) sesame seeds
- 1.5 dl (⅔ cup) cashew nuts
- 8 dl (3 ⅓ cups) whole-grain oatmeal
- 1 tsp salt
- 1 tsp ground cardamom
- 1.5 dl (⅔ cup) firm honey
- 1.2 dl (½ cup) water
Instructions
- Set out a large bowl for the dry ingredients.
- Finely grind the sesame seeds, cashew nuts, and oatmeal separately in a blender. Transfer them to the bowl, add the salt and cardamom, and mix by hand or with a whisk.
- In a separate bowl, whisk together the honey and water until smooth. Pour the mixture into the dry ingredients.
- Stir by hand until the dough comes together.
- Divide the dough into two portions. Roll each one out on a cutting board with a rolling pin.
- Preheat the oven to 150°C (300°F) using the convection/hot-air setting.
- Cut out small cookies with a round cookie cutter.
- Bake for about 25 minutes, or until lightly browned.
Tips & Variations
- Roll the dough thinner for crispier cookies or thicker for chewier ones.
- Sesame seeds can be substituted with coconut flakes.
